Unlike in DkS1. I've played long enough to confirm that you can backstab while holding the shield up. The button is the same as for the standard light attack btw. Probably a left mouse click, but I'm not familiar with K&M controls. Hmmm I tried it out now on the Tutorialbot but it did not work for me.
